I added it to her regular lunch by cleaning, peeling, slicing, washing thoroughly and boiling the root for about 15 minutes until tender yet still somewhat crisp (it will usually cook in five minutes for adult consumption but the high fiber content in lotus roots may cause discomfort in an infant stomach by irritating the bowels if not cooked through).
