I gave Beetroot (I found organic beets) to Ahalya as her 68th ingredient in the form of a powerhouse recipe full of vitamins, minerals and nutrition. I baked slices of sweet potato, carrot and beet (8 months+) with a drizzle of organic virgin coconut oil and, once done, topped with a few shavings of unsalted butter. This I puréed with bits of food and lumps intact while adding a little luke warm water. Next, I combined the mix of veges with mashed banana (I know it sounds crazy, but stay with me here) and it tasted great! The texture was perfect for a 8 month old and it’s a baby food recipe that works on so many different levels. And best of all, she absolute loved it!
Beetroots are rich in iron, calcium, magnesium, potassium, folate, vitamin A, vitamin B-complex, vitamin C and other antioxidants. They help decrease the risk of anemia, improve digestion, strengthen bone health, protect the liver and increase brain activity in babies. It is also considered a cleansing vegetable and an immunity booster for infants.
